Not only is it good for making section of you model low polygon or to change up the structure, but I find it very useful for Boolean operations. For instance; I was working on a face and I wanted to make a neck. I would just select the face and make another mesh of a cylinder to put it in the position of the neck, while unselecting it. Then I set the cylinder as the "stick" base and draw directly from the face on the cylinder, then delete the cylinder when done. In the end, this is a very multi-functional tool. Also, even though the you hide the object of which the is the "stick" base. It still sticks to it. I played a prank on one of my friends by hiding a model I made before and setting it as the "stick" base. Then I started to model the face just by continuing to to add polygons in areas of where I estimated the object. And he thought this was some type of magic modeler, automatically know each location of where I wanted to place each polygon..LOL. Well, I hope this information helps.
